We have begun making aged hard cheeses, made with fresh raw goat milk. The first of these cheeses on our menu are Raw Goat Milk Cheddar & Raw Goat Milk Parmesan.
The cheddar will technically be available for sale as early as October 1st, however it will not have much of any sharpness until February for an average Mild Cheddar, and will not be classified as Sharp Cheddar until July 2016 at the best.
The Parmesan will not be ready for sale until July 2016 at the earliest. Parmesan takes a long time to develop it's classic flavor & texture. It takes a year before it is worthy of shaving or shredding, and roughly 2 years before it is worthy of grating (think shaker cheese).
Next on our menu will be Raw Goat Milk Gouda.
